Roasted on First Street in historic Snohomish Washington our Sierra Mariscal beans are harvested in Chiapas Mexico.
This roast offers an attractive cup profile across a wide roast spectrum, crowd-pleasing, not too showy, the top notes pleasantly restrained amidst core caramel flavors, and bittersweetness. The dry fragrance has a resin-y sweet of molasses, with bittersweet cocoa not far behind, and hints of candied nuts.
There is an intensity in the wet aroma, with milk chocolate, brown sugar, and a greenish pistachio notes in the steam. Roasts have sweetness that reminiscent of barley malt syrup, and there are glimpses of acidity in the cup profile. When tasting molasses and caramel come through, along with hints of cocoa powder and red apple.
